Many of our Wondercide team members live by the mantra that baking isn't just a hobby—it's a passion and a purpose! The kitchen is where we can put aside our stress and truly immerse ourselves in the sweet art of baking.

We encourage everyone to get in the baking mood and experience the pleasure of a sweet treat to top off the day. Baking is a love language that not everyone speaks, but everyone understands with the first bite! We’re sharing a simple, vegan banana and apple muffin recipe that you can enjoy anytime, inspired by Minimalist Baker, So, get out those measuring cups and join us in indulging in this delicious holiday.

Apple Banana Muffins, Ingredients:

  • 2 ripe bananas
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 2/3 cup almond milk or any plant-based milk
  • 1 teaspoon vanilla extract
  • 2 cups whole wheat or spelt flour or substitute with a 1:1 gluten-free flour blend
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Optional add-ins or for topping: chopped nuts, dried fruit, shredded coconut

Instructions:

1. Preheat the oven to 375°F and line a muffin tin with paper liners.
2. In a large mixing bowl, mash the ripe bananas to get them to a smooth consistency.
3. Mix in the applesauce, maple syrup or agave nectar, almond milk, and vanilla extract until everything is combined.
4. Add the flour, baking powder, baking soda, cinnamon (optional), and salt to a separate bowl and whisk together.
5. Gradually add the dry ingredients to the wet ingredients and stir slowly. Be careful not to overmix. If using any optional add-ins, gently fold them into the batter.

6. Add the batter to the muffin tin so each cup is filled about 3/4 of the way full.

7. Bake the muffins for 18-20 minutes, keeping an eye on them so they don't brown too much.

8. Let the muffins cool for a few minutes in the muffin tray before taking them out and letting them cool completely on a rack.
9. When the muffins have cooled, take a bite and enjoy!
