So, we’re sharing a special pumpkin pie recipe for everyone to enjoy, courtesy of Simple Veganista's Vegan Pumpkin Pie and Minimalist Baker's Vegan Gluten-Free Pumpkin Pie. It’s sweet and festive, and it’s healthier than your average pie! Pumpkin’s swimming in your drinks, sitting on your front porch greeting visitors, so why shouldn’t it be on your kitchen table, too? End your night the right way with a dash of autumn in a delicious slice of pumpkin pie.

The benefits of pumpkin

You already know the powerful punch a burst of pumpkin flavor can pack. But did you know about all of the health benefits pumpkin provides? Believe it or not, pumpkin is a vegetable. So, when the doctor tells you to eat more veggies, you can turn to this recipe! We’re joking, but the pumpkin addition does provide a lot of nutrients to this tasty dish. Pumpkins offer lots of fiber, vitamins, minerals, and antioxidants. Pumpkin is high in beta-carotene, which your body turns into Vitamin A, helping improve immune system health, normal vision, reproduction, heart and lung health, and growth and development.

Thanks to the amount of beta carotene found in pumpkins, you’ll have a better chance of protecting your skin from sun damage. You’ll also be doing your heart a favor due to the potassium that pumpkins provide which can help lower blood pressure. Potassium is a crucial part of how our body functions. It helps send signals through the nervous system and move our muscles.

In addition to Vitamin A, pumpkins supply ample amounts of Vitamin C, which helps white blood cell production. White blood cells are a vital part of keeping your body healthy as they help fight infections and diseases. They also help heal wounds faster. And another vitamin that pumpkins provide is Vitamin E. This nifty vitamin helps boost the immune system, sustain good skin, reduce stress, and help maintain healthy vision. Vitamin E helps protect your blood when it becomes exposed to harmful things like tobacco and radiation. So, to make a long story short, a pumpkin a day keeps the doctor away!

Crust Ingredients:

  • 1 ½ cups almond flour
  • ¼ cup melted coconut oil
  • 2 tablespoons of maple syrup
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon (optional)

Filling Ingredients:

  • 1 can (15 oz) pumpkin puree (not pumpkin pie filling)
  • 1 ½ cup soaked cashews (soak for at least two hours)
  • 1 can (14 oz) full-fat coconut milk
  • ¾ cup maple syrup
  • 1 teaspoon vanilla extract
  • 3 tablespoons of homemade pumpkin pie spice (2 teaspoons cinnamon, ½ teaspoon ginger, ¼ teaspoon nutmeg, and ¼ teaspoon cloves)

Baking instructions:

Before baking, preheat the oven to 350°F.

Now it’s time to assemble the crust. In a medium bowl, mix the almond flour, melted coconut oil, maple syrup, salt, and cinnamon (if using) until completely combined.

Grab a 9-inch pie dish and press the mixture evenly into the bottom and up the sides.

Bake the crust in the oven for 10 minutes, then remove it and set it aside while you prepare the filling.

Now, in a blender, blend the pumpkin puree, coconut milk, maple syrup, cashews, vanilla extract, and homemade pumpkin pie spice together until it reaches a smooth consistency.

Then, pour the filling into the pre-baked crust and smooth it out on the top with a spatula.

Bake the pie for 50-60 minutes, or until the filling becomes slightly golden. Be sure not to overcook it by leaving the center a little bit jiggly.

Let the pie cool completely at room temperature, then refrigerate for at least 4 hours or overnight so it can fully set.
